What is Cutting Chai?

"Cutting" chai is a popular Indian street tea tradition — a half-cup serving of strong, milky, sweetened black tea. To make it: bring 2 cups of water to a rolling boil, add 2 teaspoons of loose leaf CTC black tea (or 2 tea bags), add half a cup of milk and sweetener to taste, steep for 4–5 minutes, strain, and pour into the cutting chai cups.
